    Теграл Эверкейк Рико 1000 г
    Яйцо куриное 500 г
    Масло растительное 425 г
    Суфле
    Фаза 1. Крем
    Дели Чизкейк 140 г
    Саммум 40 г
    Масло сливочное 100 г
    Фаза 2. Сироп сахарно-агаровый
    Агар-агар 10 г
    Сахар-песок 312 г
    Вода 300 г
    Фаза 3. Белковая
    Палома Бланка 146 г
    Вода 125 г

    Технологический процесс

    Шаг за шагом

    Приготовление полуфабриката

    Смешать все ингредиенты в миксере на средней скорости в течение 3-4 мин. Распределить полученную массу на лист для выпечки через рамку. Выпекать в течении 8-10 минут при 180 С. Охладить. Нарезать необходимого размера

    Приготовление суфле

    Смесь Палома Бланк» перемешивают с водой (Фаза 3) и взбивают сначала на медленной скорости, затем на большой до получения стабильной взбитой массы.

    Не прекращая взбивания, во взбитую массу струйкой вливают горячий сахарный сироп (Фаза 2, уваренная до 103 °С) и продолжают взбивать до устойчивой массы.

    Далее вносят предварительно приготовленный масляный крем (фаза 1) и быстро перемешивают до однородной консистенции (около 10 сек), чтобы масса не осела.

    Сборка изделия

    В необходимую форму выкладывают выпечной полуфабрикат.
    Полученную суфлейную массу разливают в заранее подготовленные формы.
    Застывание происходит при комнатной температурев течении 5-10 мин.
    Скорость и степень стабилизации зависит от типа используемого агара.
    Застывшее изделие глазировать предварительно темперированным молочным шоколадом Лэ Селексьон.
