    Технологический процесс

    Шаг за шагом

    Приготовление рулетного бисквита

    Все ингредиенты, кроме корицы, внести в миксер и перемешивать на медленной скорости 5-6 мин, в конце замеса добавить корицу и перемешивать 1-2 мин. Выпекать при температуре 180–200°С. в течение 25-50 мин в зависимости от массы тестовой заготовки.

    Приготовление фруктовой прослойки

    Белколад Бланш Селексьон растопить и перемешать с начинкой Топфил Лесная Черника 60% до получения однородной консистенции.

    Приготовление шоколадного мусса

    Предварительно приготовленный крем Кремико смешать с растопленным Белколад Нуар Сельксьон. Взбить Шантипак и поэтапно добавить в шоколадную массу. Перемешать лопаткой до однородной консистенции.

    Приготовление крема

    Смешать в миксере смесь Кремико и воду до получения однородной консистенции.

    Сборка торта

    Бисквит выложить в кольцо, нанести фруктовую начинку и затем мусс. Повторить выкладку еще один раз. Заморозить торт, после заморозки залить предварительно подогретой глазурью Мируар Глассаж Нуар и Брило белый. Декорировать сусальным золотом.
