    Теграл Эверкейк 500 г
    Растительное масло 212,5 г
    Яйцо куриное 250 г
    Белколад Ориджин Перу 64 380 г
    Крем Перу
    Сливки 400 г
    Заварной крем 250 г
    Белколад Ориджин Перу 64 250 г
    Ганаш Монтэ
    Крем Перу 200 г
    Сливки 200 г

    Технологический процесс

    Шаг за шагом

    Приготовление профитролей

    Смешивать первые 3 ингредиента на средней скорости в течение 5 минут в миксере с лопаткой. Отсадить профитроли и декорировать какао-порошком Белколад. Выпекать в течение 6 минут с закрытым шибером , после этого 25 минут при температуре 165°С с открытым шибером.

    Приготовление песочного теста

    Внести в миксер маргарин 82%, яйцо, смесь «Изи Патакрут» и взбивать на высокой скорости 2-3 минуты до получения пышной белой массы. Затем добавить муку, какао-порошок и перемешать на средней скорости 1-3 минуты до получения однородного теста. Выпекать в течение 20-30 минут при температуре 180-200°С в зависимости от вида печи и массы тестовой заготовки.

    Приготовление мармелада

    Смешать глазурь Армони Руби с начинками Топфил Черника 60%, Топфил Брусника 60% и Топфил Малина 60%. Полученную массу довести до кипения, затем остудить до 60°С и залить в желаемую форму. Оставить для застывания.

    Приготовление шоколадного бисквита

    Смешивать три первых ингредиента в течение 5 минут в миксере с лопаткой на средней скорости до получения однородной консистенции. Растопить шоколад Ориджин Перу 64 до 45°С и перемешать с предварительно приготовленной массой. Распределить готовую массу по силиконовому листу через рамку высотой 5 мм. Выпекать 10-12 минут при температуре 180°С.

    Приготовление крема Перу

    Смешать вместе подогретый заварной крем Фабулосо и растопленный шоколад Белколад Ориджин Перу 64. В полученную массу добавить в 2 приема, предварительно взбитые до сметанообразной консистенции сливки .

    Приготовление ганаша

    Смешать крем Перу и предварительно взбитые сливки до получения однородной консистенции.

    Сборка и оформление

    На предварительно выпеченное песочное тесто выложить часть крема Перу. Далее выложить, предварительно вырезанный в форме круга шоколадный бисквит Перу. Сверху нанести фруктовый мармелад и выложить на него оставшуюся часть крема Перу. Декорировать маленькими профитролями, начиненными ганашом Монтэ, и кружками фруктового мармелада.
