    Технологический процесс

    шаг за шагом

    Приготовление творожного бисквита

    Внести в чашу миксера все ингредиенты и перемешать на средней скорости 4-5 минут.

    Приготовление миндального полуфабриката

    Внести в чашу миксера все ингредиенты и перемешать на средней скорости 4-5 минут. Смешать две бисквитные массы: творожный бисквит и миндальный п/ф в пропорции 1:1. Выложить полученную массы на лист для выпекания. Выпекать при температуре 180°С в течение 5-8 минут в зависимости от массы тестовой заготовки.

    Приготовление прослойки

    Перемешать начинку до получения однородной консистенции.

    Приготовление мусса

    В миксере взбить предварительно охлаждённые сливки Шантипак. Стабилизатор Палома Баваруа смешать с молоком и внести Фабулосо (подогретый до температуры 50°С). Перемешать Фабулосо, Дели Йогурт, добавить частями Шантипак и цедру апельсина.

    Приготовление геля

    В Армони Нейтральную добавить воду, прокипятить, затем добавить Мируар Нейтральную. Охладить до температуры 70°С, внести розовый краситель, перемешать и нанести на изделие.

    Сборка торта

    В кольцо желаемого размера выложить бисквитный п/ф, затем слой мусса, затем бискитный п/ф. На него выложить начинку Вивафил брусника, затем слой мусса. На мусс выложить ещё один бисквитный п/ф. Заполнить форму муссом до верха. Охладить. Залить поверхность торта предварительно подготовленным гелем для покрытия. Украсить шоколадным декором.
