    Технологический процесс

    Шаг за шагом

    Приготовление полуфабриката

    Смесь Теграл Шифон Кейк, яйцо, взбить до плотной массы и увеличения в объеме венчиком, затем, добавить растительное масло и перемешать. Выпечь рулетный бисквит при температуре 180º.

    Приготовление мусса

    Желатин замочить в холодной воде. Экселанте пробить венчиком соединить с Дели Чизкейком и Топфилом Вишня 80%, добавить растопленный желатин, перемешать.

    Приготовление меренги

    В сбивальную машину согласно рецептуре, загружают воду, Палома Бланка, добавляют сахарный песок и сбивают до устойчивых пиков. В готовый белковый крем постепенно добавляем Дели Мак, перемешиваем.
    Отсаживают массу насадкой на листы, выстланные пергаментом.
    Выпекают при температуре 100°С в течение 30-70 мин в зависимости от размеров заготовок.
    Выпеченный полуфабрикат охлаждают в течение 30-35 мин, затем снимают с листов бумаги.

    Приготовление геля

    Гель Армони смешать с водой, довести до кипения , добавить Мируар нейтральный и Топфил Вишня. Перемешать , прогреть не доводя до кипения.

    Сборка торта

    На дно силиконовой формы и боковую поверхность выкладывается шоколадный мусс, затем кладется как начинка высушенная маковая меренга, заполняется форма шоколадным муссом и закрывается форма тонким слоем бисквита. Заготовку заморозить , затем вынуть из формы и покрыть приготовленным гелем фруктовым. Украсить декором из шоколада.
